Solid tomato bread soup with smoked salmon
For 10 people
800gr Mutti tomato pulp
1 Altamura bread
2 cloves of garlic
Salt and pepper
10gr extravirgin olive oil
1 green onion
10gr basil
For the sauce
1dl extra virgin olive oil
3cl balsamic vinegar
2gr salt
300gr sliced smoked salmon

Directions
Slice the bread and remove the external crust, toast it for a few minutes in the oven. Rub garlic cloves over the slices of bread and then cut them into small cubes. Heat the olive oil and the green onion in a saucepan; add the tomato pulp and cook for about 10 minutes. Adjust salt and pepper.  
Add the bread and the basil to the tomato pulp, stir and leave it to cool for about 30 minutes.
With the help of a small circular pasta cutter, give a cylindrical shape to the tomato bread soup. Pour in a bowl the balsamic vinegar and the salt, emulsify with a whisk and extra virgin oil. 
 
Presentation
On a small plate lay down the tomato bread soup cylinder, add above it the slices of smoked salmon, on a side of the place draw a line with the balsamic vinegar sauce and garnish it with a basil leaf.
